Weekend Ramblings

We had a pretty productive weekend.  We had a friends tractor so we could get the property mowed and cleaned back up.  We had a BABYSITTER for the kids so Dean and I could both be outside cleaning up and mowing.  I can't tell you how big of a deal this was even though we were technically still home, lol!  Fresh air and kiddo free did my soul a lot of good! Plans for this week were to get everything ready and bought for school and to get this house de-cluttered!!   I don't know about any of y'all but when clutter starts to build in our house, even if it's neatly put somewhere, my anxiety starts to build.   At this point I have so much in my "to sell" pile I'm pretty sure I could open up a small retail space, hahah!  But for real!!  We're too far out for yard sales.. How do you all handle it?!?  I'll be sorting, boxing things up and trying to come up with some plan to sell it or something along those lines.. no matter what it all needs new homes!

Fun Friday

The kids and I had a much needed day in the water with friends.... and no one came home sunburnt!! haha!   We stayed in the kiddie section the first half of the day, took a break for lunch and then hit the lazy river for a bit.  We then went to the one slide that Tenley was able to ride while letting Zane and Peyton jump on the other slides there for a couple of quick slides.  A little more lazy river and a swim in the wave pool before the storms rolled in.   Everyone crashed FAST tonight!

One Day Down....

Well today didn't start off well, but my awesome hubby made me go to the gym to get those endorphins rolling.  I didn't crank out much today but did get about 15 min or so of some running in.  That's a start. Though I still need to do the task of before pics and measurements.  My body seems to lose inches before I EVER see that dang scale move!!  I can defiantly say I'm ready for school to start back. I know most mommas are right there with me on that one! lol!  It's been a short and long summer all rolled into one some how.  These three little munchkins are making me bonkers and with the heat the way it's been we've all been trapped indoors.  Which lets be honest, it doesn't help anyone. Creamy Chicken and Cauliflower Rice Casserole

Holy WOW!  This passed my expectations and it was yummy!   All three kids ate it and Zane actually asked for seconds!!  Winning!! Here's the ingredients for this yummy thing.  (I'll let you know what I changed around for us too!) Ingredients..... 1 Rotisserie Chicken (4 cups) 1 Cup Heavy Cream  (I used Heavy Whipping Cream) 1 Cup Cream Cheese, Softened 1 Teaspoon Minced Garlic 1/2 Small Onion, Finely Minced 1 Cup Sharp Cheddar Cheese, Shredded  (I used a mix of Cheddar and Mozzarella) 1 Teaspoon Smoked Paprika (I skipped this) Pepper to taste (Again skipped) 1/2 Cup Chicken Stock 4 Cups Cauliflower Rice  (For ours I LyOVE Birds Eye Steamfresh Riced Cauliflower) *I did season with about 1 Tablespoon of Nature's Seasons. Directions.... 1. Preheat oven to 400.  Lightly spray a 9x13 inch pan with cooking spray and set aside. 2. Remove the skin from Rotisserie Chicken and discard.  Remove the meat from the bones and chop.  (Honestly I just pulled ours apart)

Chicken Crust Pizza

Made something new today for lunch.. Chicken Crusted Pizza!!!  Have to say it was pretty yummy.  We'll prob change up a little next time but we def weren't disappointed! Here's the recipe for the Chicken Crust.... best part.. it's only 3 ingredients!!! Ingredients... 10oz Canned Chicken 1oz Grated Parmesan Cheese 1 Large Egg 1. Drain the canned chicken, getting as much juice out as possible. 2. Spread the chicken out on a baking sheet (I did place ours on parchment paper).  Bake 350 for 10 minutes to dry out the chicken. 3. Once chicken is done place it in a mixing bowl.  Increase your oven to 500. 4. Add your cheese and egg to the chicken and mix. 5. Place your mixture back on your pan. (I again placed it back onto the parchment paper)  Then placed a piece of parchment paper on top of the mixture and used a rolling pin to roll it out. 6. Bake your crust for 10 minutes at 500 7. Once it's done remove your crust and add all your yummy toppings. 

Getting Back To Me

I honestly don't know where to start.  I'm hoping that getting back to blogging and that putting myself out there will not only bring me back to me but will hold me more accountable and maybe, just maybe, help someone else who may feel the same.  This may jump around a bit but please bare with me. In recent months I've just been going down a slippery slope of disappointment.  Not necessarily with others but more so with myself (and when I allow my self to try to lean on others to only be let down and feeling so angry with myself for trying to lean and then tell myself this is why I don't ask for help or say anything)  I know us moms are hard on ourselves but this has festered into a whole different monster. Depression and Anxiety are no joke and very very real feelings. I'm 36 and I feel like I'm just NO WHERE close to where I thought I'd be in life.  I planned to be a marine biologist and travel and I've done none of that to date and I think it&
