Monster Tent

So today I was at Target getting my weekly things.. and then of course I do some browsing. Well today I ran across this Monster Tent for Zane.. it was in the clearance isle. Normally this thing was $30 and I picked it up for just $7!! I was so excited that I just had to put it up in the living room for Zane to see when we got home. Now.. we did leave it up for a couple of days.. but had to take it down. I bought it for the new house.. there certainly is no room for this thing in our house now, lol. Anyways.. here some pics of Zane playing around that night (and yes... he's bringing Sexy Back in his Small White T, lol!!)

White Chicken Chili

I got this WONDERFUL recipe from Andrea over at A Burns Life.

This has become a favorite in our house very quickly! Tonight was the second time I fixed it and I changed a couple of things up....

What you need....

1 - pack boneless chicken breast (3-4 breast)
1 - 8 oz can of diced tomatoes w/ green chilies
1 - 8 oz can of diced tomatoes
1 - lg chopped onion
1 - clove of garlic
1 - pkg White Chicken Chili Mix (McCormick brand)
1 - 8 oz can of chicken broth
1 - box of rotini pasta
sour cream
shredded cheddar cheese

I start out by boiling the chicken breast in a pot of water with seasoning. And going ahead and cooking the pasta.

While the chicken and pasta are cooking I throw the cloves of garlic in the food processor to get it finely chopped. In a pan sautee the garlic with 2 tbsp of olive oil on Med heat for 2-3 min. Add chopped onion and cook for 5-10 min or until onion is translucent

While those two things are going I go ahead and add the tomatoes, chili mix and chicken broth to the crock pot and turn it on low.

Once the garlic and onions are finished dump them into the crock pot as well.. and stir.

When the chicken is done, let it cool and then shred your chicken by pulling it apart... once your done throw it in the crock pot as well... turn on high and cook for 30-45 min... stirring occationally.

once everything is done .. I make a base with my pasta.. then add the chicken chili and top it off with shredded cheddar cheese and sour cream :) .. I actually used mozzarella tonight

Zoo Playdate

So I decided that I wanted to start a local playgroup for those SAHM ... and for those who work too... on Facebook. We had our first playdate at the Zoo today... and guess what.. the photographer forgot the camera AGAIN!! I must admit I was so excited about getting out of the house with other moms and kids that I'm making that my excuse for forgetting the camera, lol! We had a lot of fun and can't wait to meet up again next week... and I promise there will be some pics to follow :)

House Hunting...

So Dean and I have actually been house hunting quite a few times in the last couple of months... just deciding what we wanted to do... want we wanted... and if we were ready for that step again. Don't get me wrong, We're certainly ready for more room... but we're still a little burnt from the last house.

We've made the decision that for the time being we're just going to order a double wide and have it moved to the spot where the single wide we are currently in is sitting. We both want a house but with Dean being the only one with a full steady income we just aren't wanting to take that step yet... baby steps, baby steps, lol! Plus this is certainly cheaper! Even with us customizing it to what we want.

So once we decided what were def going to do the search was on. And the greatest part.... We have found the home we will be ordering one year from now. That gives us plenty of time to make some mock payments to get use to it and save money for our down payment, plus permits and some extras.

All I can say is this "Miss Impatient" is certainly learning some patience! But at least I know what home we are getting and the measurements of everything.. so I do get to shop some for our home-to-be. :)

Tonight Aunt Kim came over to watch little man for us while we headed off to get Dean's tattoo!! He's been wanting one since before we were dating.. and has talked about it on and off since... and tonight was finally the night. We met with Raymon a week or so ago so that him and Dean could talk and Raymon could come up with something. We went last night and checked it out.. Raymon made a few adjustments and well here are the pics :)

If you are looking to have a tattoo done I highly recommend Raymon.. just let me know and I'll get you his info, He's AWESOME!!!

Stuck in a Rut...

So.. with all this cold weather lately there is absolutely NOTHING to write about.
We've just been stuck indoors for what seems like Months trying to keep warm. I must admit that I've been seriously re-thinking the decision of not fixing our furnace ... because "we live in Fl.. how many nights are we REALLY going to need to use it... 2! I think we'll be ok till we get our new house" Yeah.. totally re-thinking that! We've had 2 electric type heaters going constantly since all this cold moved in... not to mention using the stove as a heater for the living room and kitchen... ahh the life, lol! I will certainly be happy when we do get our new house... I think this is going to make us appreciate it all the more. I just keep telling myself.. "Just one more year... You can do it"

Anyways.. enough about the cold. I did manage to get out of the house today and get little man's hair cut again (Thanks Abbi!!) and run some errands, thank goodness! I've also been working on (since Zane's first birthday) of making a post of all the words little man is up to.. and well the longer I put it off the longer that list keeps getting... hoping to sit down and do it in the next couple of days... seeing that I know I won't remember them later...

I'm super excited about the girls day that we have planned for Sat. With all this cooped up in the house non-sense I could really use a day out.

Tonight we went over to Raymon and Alison's house to see the tattoo that Raymon had drawn up for Dean. Looks like tom I'll be posting some pics of Dean's very first tattoo. :)

I've been debating on doing a New Years post.. but I just can't make myself do it. I mean.. I know the goals I have set for myself... there pretty much the same every year... Every year has it's good times and it's bad... I'm choosing to try and forget the bad of last year and move on. The goods will always be remembered :) I have been Greatly blessed with my photography toward the end of last year and so far it seems to be carrying the same pace into 2010.. I couldn't have asked for more.

The time I have spent at home has made me think about some things... do I go back to work.. or do I just leave things alone and just stay home with little man and do my photography when I get it... and I feel I have received my answer on that and I'm no longer going to ask that question. What a relief that day was! lol! I have made the decision to go back to school. I have always though a ultrasound tech would be a great and rewarding career. The only thing I am now thinking about is should I finish my AA first.. there are only 2 classes left on it... So.. I'm making 2 appts.. one with FCCJ or Florida State College.. lol.. to see about my AA ... and then with University of Phoenix to see what I need to do to get going. I'm really excited about this step! It will only take about 18 months to complete the course once I start.

I have also been doing some thinking of whether I want to post my blog as Public again. I have several who don't read it any more because they have to go through the log on situation and ask me to convert back. Still thinking hard on this one... We'll see...

I think that's enough blabbering for now... Just thought I'd let everyone know for once I'm not behind.. there just simply isn't anything really going on right now, lol!

Black and Blue

So Zane got his first black eye of the year last night. Not really sure how it all went down.. I was in the bedroom and Dean was at the door watching Zane walk down the hallways to us once he went and got his truck. When all of a sudden I hear a knock and then Zane screaming! When I asked Dean what happened he said that Zane had fell into the wall. Dean brought little man to me and the first thing I see is his poor little eye. Some how he managed to pitch it. Not sure if the truck was involved or not, lol. He only cried about it for maybe 20 min and then wanted back down so that he could go play some more. Here is a pic of it last night...

And then today... Not NEARLY what we thought it was going to be.

I Love You

Tonight Zane was playing around in the back room with Dean while I was in the other room... We have a picture frame in there just sitting on the floor (I'm currently re-arranging pics) anyways, Zane stops and points to one of the pictures in the frame, it's our first family picture together, and says "I Love You!" How stinkin' cute is that!?!?! I walked in from the other room and couldn't say anything.. all I could do was look at him totally taken back from what he'd just said. My little man is growing up too fast!!
