White Chicken Chili

I got this WONDERFUL recipe from Andrea over at A Burns Life.

This has become a favorite in our house very quickly! Tonight was the second time I fixed it and I changed a couple of things up....

What you need....

1 - pack boneless chicken breast (3-4 breast)
1 - 8 oz can of diced tomatoes w/ green chilies
1 - 8 oz can of diced tomatoes
1 - lg chopped onion
1 - clove of garlic
1 - pkg White Chicken Chili Mix (McCormick brand)
1 - 8 oz can of chicken broth
1 - box of rotini pasta
sour cream
shredded cheddar cheese

I start out by boiling the chicken breast in a pot of water with seasoning. And going ahead and cooking the pasta.

While the chicken and pasta are cooking I throw the cloves of garlic in the food processor to get it finely chopped. In a pan sautee the garlic with 2 tbsp of olive oil on Med heat for 2-3 min. Add chopped onion and cook for 5-10 min or until onion is translucent

While those two things are going I go ahead and add the tomatoes, chili mix and chicken broth to the crock pot and turn it on low.

Once the garlic and onions are finished dump them into the crock pot as well.. and stir.

When the chicken is done, let it cool and then shred your chicken by pulling it apart... once your done throw it in the crock pot as well... turn on high and cook for 30-45 min... stirring occationally.

once everything is done .. I make a base with my pasta.. then add the chicken chili and top it off with shredded cheddar cheese and sour cream :) .. I actually used mozzarella tonight
